I’m half Dutch, and I have never understood why anyone would choose Gouda over cheddar for an everyday cheese (sandwiches, cheese sauces, topping lasagna etc)
It’s got such a bland flavour profile over cheddar, especially mature cheddar, doesn’t come close to the umami of cheddar etc.
Then there are dozens of other semi soft cheeses, like emmentaler and boerenkaas, Edam, Gloucestire and Wensleydale that are all so much more flavourful and easy to use as sandwich/everyday cheese.
